McCalisters Deli was the worst for that. Tons of tasty food just going to waste. It was common to see plates with 3/4 of the food still on them.

I've never worked in the food industry, but I saw this happen today. I went out for lunch and some guy on the table across from me ordered a big pile of ribs and chips, but got up and left it after only eating 2 ribs and maybe half the chips. I just don't get it, if you're not actually hungry, don't order a big meal.

A problem with your menu and style. Kebab joints are in that problem, the menu spans 100 dishes but everyone goes for salad pizza or a kebab roll because that's what people think of when buying from a kebab joint.
