Diet is about finding a good homeostasis. I will eat at a defecit until i achieve the aesthetics i want, and then slowly increase calories until I get to a place of maintenance.

But it doesn't have to be. I'm assuming OP is asking for dishes they can prepare at home where that can be controlled. All the "free flavor" you get from grilling/smoking is great in that you often don't need any bbq sauce/glaze
