Finely chopped carrots
Cabbage
Beans
Chili
Rice noodles
Lime
Peanuts
Cilantro dried green leaves
Chili powder
Garlic
Spring onion
Fish sauce
Soy sauce
Vinegar
Sugar

The recipie is simple. Use moderate amouts of everything. Heat some oil on medium temperature and fry minced garlic, chili powder, onion powder and the cilatro leaves (dried). Let the spices infuse. Add three tablespoons of sugar (yes, it is a lot) and let it caramelise a bit. Low temp all the way, dont burn the garlic!

Add one teaspoon to one tablespoon (according to liking) of vinegar of some sort.to deglaze pan. Add the finely julienned cabbage and the "rasped" carrots. Add around 1,5-2 dl water and some 1/2 chicken/veg stock cube. Let it simmer. Add fish sauce. The noodles have beenn soaking in cold water for a while. Add them to the mix. You can also use meat or eggs.

Sprinkle spring onions, cilantro, peanuts and lime over. yummy

Thank you, that was fun to hear! Quinoa balls are good, and do well as vegan meatball replacements in asian dishes. I can't remember the specific recipie now, but I guess it contained some kind of red curry paste, coriander, fish sauce (not vegan!).

I prefer to make meat replacements with lentils, as they are cheaper than quinoa. Recipie:

As much red split lentils as you would ike
Spices (salt, pepper,, chili, indian spice like garam masala, curry, or just have them plain with salt & pepper)
Stock (optional)
Flour, chickpea flour is great for this and healthier
Butter/oil

Cook the lentils in water with a stock cube for 10 min. Drain the lentils and add to a bowl with some flour and your spices of choice. Make it to a "dough", but don't use too much flour! Nuts/breadcrumbs can also be used to coarsen it up.

Form small balls, burgers whatever and fry them on medium heat. Cheap, healthy and good!

Cool, thanks! I was going to ask about how expensive Quinoa is where you are...I live in the US and it isn't cheap here. Honestly I was somewhat surprised to see that you were using it, cause it only took off here within the last 3-5 years and in lots of places in America people have never heard of it. Yes, it's become a kind of food-meme. It does not have any superior taste qualities compared to other vegetable proteins, but it is healthy. It's like very expensive protein rich rice.

I tried going vegan a couple of years ago, hence all the weird food, but quickly started to miss meat and cheese. I don't regret going six months without animal products, though. It has made my food repertiore much larger and healthier.

Yeah, that's what lapskaus basically is. I prefer to make it with pork knees (svineknoke in Norwgian). Lamb/sheep is also good. The only spices traditionally used here is salt and pepper and the occational bay leaf for the continental fine people lol. The flavour should come from the root vegetables. Parsley root, celery root and cabbage root.
