I created this amazing abomination, a white poutine. I live in Europe, am too lazy to cook up a gravy, and cannot find cheese curds anywhere. Solution: Sauce bearnaise (from powder), authentic Greek feta broken into "curds", and British-style fat fries. Yes.

It's amazing. I cooked up the sauce bearnaise on margarine and whole milk, so it's rich and has a lot of taste. Because it has a lot of taste, there is a risk that the taste of the cheese disappears. Feta was the perfect choice, then, as it also has a lot of taste, and the two compliment each other surprisingly well.

I will have this again. Many times.

The only time I had white sauce on a poutine was at the Fairmont in Montreal. The restaurant there had a Seafood Poutine, and although it was 30 bucks, it was well worth it.

It does in the European Union. There's a law about whether or not you can call a product "feta". The method is protected and the place of origin must be Greece. It must be made from goat's milk (or sheep?). Else, you can only call it "salad cheese" or whatever. The difference in taste is stark. I would never even consider putting "salad cheese" in this.
