I've always felt dumpling filling texture was limited by their cooking method, as it always results in a grayish meatball. I want to experiment with pre-cooking it, like stir frying it with some of the vegetable and then using egg to hold it together.

I'm not so sure on that. You can have a meatball, or you can have a smooth textured filling such as by using sweet potato purée, or you can have a spread filling by adding more water. You can also have chunky fillings, binding the filling with cornflour or some other thick sauce.
