I've seen this webm and have commented on the exact same thing and this is what I came up with.

Sometimes blacksmiths tap the anvil as they hammer things to keep a rhythm and consider their next strike. It's kinda like APM spam in starcraft 2. So that may be where the motion originated from.

However, you will notice that this guy is cutting meat which means that he made a serious error in his vocational decision somewhere along the way in his life. Therefore I would conclude that he's trying to make himself feel better about it by giving off the perception of "passion" he has for his "trade".

Standard habit in the industry. Keeps the rhythm going when you're cutting. I haven't cooked professionally in 6 years, but I still do it all the time, especially when I'm in prep mode for a big meal and fabricating lots of meat or chopping veggies.
