Take your favorite dried chile pepper below:
ancho OR pasilla OR guajillo
Slice into thin rings with scissors (or lengthwise into strips)
Into small nonstick or cast iron, put in a little coating of olive oil, heat to medium, sprinkle in the dried chile rings, tossing with a fork to evenly toast until slightly darkened and puffy. (Don't burn them!) Remove to paper towels. Take oil off heat to cool.

Use chile peppers when cooled to top chili, soups, even popcorn. Use the oil as desired too! These chilies vary in heat, from sweet-hot and raisin-like to pretty damn hot. Experiment as you wish. Try anchos first if new to dried chilies. Also yummy folded into a quesadilla with grilled onions, or on top of eggs, omelettes. Use the oil to warm your corn tortillas with a quick pass over the cast iron to soften up before filling.

The CHILI HAS NO BEANS!! thing comes from Competition chili, which is made strictly without beans or fillers of any kind for the purposes of tasting. In order to clarify and narrow the scope of cook offs, competition chili is strictly meat, chili, seasonings, and sauce

This is strictly for the purposes of grading and scoring the CHILI, and has never been intended to imply chili should not be served on, aside, or mixed with fillers or starches in order to make a more robust meal out of what is essentially a flavourful gravy.

If we look at the actual culinary origins of chili, we see they are murky and the exact point of origins is unclear, but what unifies all of the prevailing theories is that the inventors of chili (Cowboys, Nuns, Ranch-hands, etc) were typically impoverished individuals or working on a strict budget who needed to produce flavorsome and savory food with a limited selection of ingredients, seasonings, and cheaper/lower quantities of protein.

It is both reasonable and 100% authentic then that chili would be served with beans, biscuits, or other starch fillers in order to stretch the gravy to feed more people for less.

OP here. So I looked through the thread and at some other recipes and I've finished seasoning the chili. I'm now letting it simmer for about two - three hours.

Despite your memeings, the base of the chili is three types of beans: red kidney, white tuscan, and black turtle beans. The mixture is about evenly split between the three, with the red kidney beans having a little more than the other two. Together they're about 35 ounces. Then I add two cans of unseasoned tomato sauce and crushed tomatoes, measuring about 12 ounces total.

For seasoning:

3 tablespoons of chili powder
A few Thai Bird Eye Chilis, chrushed
1 teaspoon of cumin
1 teaspoon of oregano
1/2 teaspoon of cayenne powder
1 tablespoon of cocoa powder
1/2 cup of brown sugar
1/2 cup of dark beer
1/2 cup of brewed coffee (hazelnut since that's the only one I have at the moment)

Other ingredients:

1 whole onion chopped
2 green peppers chopped
A can of corn

Before the final hour, I'm going to add in some lime vest, as well as some mexican cheese to thicken it up instead of using a flour.

In about 4 or 5 hours, I'll report back with the results. I hoped I succeeded.
