This. I worked in a high end bistro, we did Sunday brunch every weekend. Part of prep for brunch was called CPOP, which stood for crepes, peppers, onions, and more peppers.

The onions and one batch of peppers was for our potato hash. We chopped the peppers bigger than the onions so that the skin didn't get all shitty when we sauteed the whole mess together. Worked out fine.
