If I freeze my meat before eating, what's the danger in eating it raw? Freezing kills all the parasites and pathogens.

As it defrosts and comes back to room temp bacteria starts to grow.

It doesn't kill them all off, usually just makes them dormant. Which is why things can very slowly go moldy in the fridge, and to a lesser extent the freezer. So unless you eat it completely frozen, the pathogens will go out of dormancy and kill you.
