Are there egg-based pasta dishes that aren't carbonara? Eggs and pasta are commonly on-hand, but the fatty meat required for good carbonara rarely is, making carbonara a poor emergency food.

Saimin uses egg noodles and usually includes hard boiled egg as a topping.

Indeed. There's Neapolitan-style pasta with zucchine. Naples makes a number of egg-thickened sauces, which is why I've always thought that, despite Rome being famed for it, carbonara is of Neapolitan origin (though I've no proof of that).

Dunno if you're counting noodles as pasta, looks like you're talking more about italian style than oriental style, but egg fried noodles technically meet your brief and are delicious.

Prep meat/veg
(diced bacon, pork, chicken, chopped onion, spring onion, bell peppers, mushroom, bean sprouts, water chestnut, pineapple, garlic, chilis etc.)
Beat one or two eggs in a bowl
Boil noodles in a saucepan
Fry meat in wok/big frying pan
Add drained noodles and veg
Move the food to one side of the pan and make scrambled eggs in the empty side, then mix that in with the rest of the food
Add your sauce mix (soy sauce, lemon, honey, chili, garlic etc.)
Mix it all up in the pan, fry for half a minute then serve

A word on that sauce mix: The east asians have a system of making their sauce out of 4 flavour components: sweet, sour, salt, and spicy. For example: ginger is spicy, fish sauce is salty, honey is sweet, and lime juice is sour. A sauce made up of those would theoretically be more balanced than a sauce made of ginger, garlic, chili and black pepper (all spicy).

Or just buy a packet/jar of stir fry sauce. Satay is always good.
