Po Boys are a thing in Louisiana, mostly New Orleans. A lot of people get fried shrimp po boys, and tourists usually get oyster po boys (no flavor though, really). Roast Beef po boys are the best though. Nothing complicated by name but how the ingredients are prepped is everything.

Fresh french bread, slow roasted beef with gravy, tomatoes, pickles, lettuce, and some mayo. The bread is usually crusty, being warm and soft inside, allowing it to absorb some of the gravy from the beef, giving it a really fantastic and rich texture complimented by the mayo and then offset with the pickles, with the tomato and lettuce giving it more dimension and preventing the bite from being too heavy.

Really a perfect sandwich, but the muffaletta is superior. (just don't fucking go to Central Grocery for one, they blow)

The BLT is the best sandwich archetype, if you ask me. It's the engineer's sandwich. You can make one with shitty bread, shitty bacon, shitty lettuce and shitty tomatoes with some shitty mayo and it will still be pretty damn tasty. There's no way to fuck up a BLT because it's perfect at a very basic level.

Would really recommend Karelian Pies and the chantterelles with rye bread, both are pretty easy to make, ask for very little ingredients and are delicious. Simple and clean flavors but they just work so damn well.
