So does adding cream cheese to alfredo sauce actually help or is it just better to stick with the usual Parmesan, cream, and butter?

I've found with basic italian stuff like this that it truly is best to just stick to basics. I usually just melt butter and add parmesan and cream, then a little more parmesan to tighten it back up. consistency is truly at the cook's discretion though.

I don't like cream in mine. cream makes it too bland. you can get a good viscous sauce with just the cheese, oil, and the starch from the pasta water.

try making your pasta with the least amount of water you can so that the water is really starchy.

It turns out sour as shit half the time if you don't.

I don't know what these guys are on about, but half of the "traditional authentic alfredo" sauce is either too tangy or rich and makes you want to puke after half a serving.

Sauteed garlic and butter, then mix in cream cheese, stir continuously until smooth and mix in parmesan and maybe some chicken stock with salt and pepper.

Sure it might not be fucking alfredo sauce, but it is still pretty decent and doesn't taste like shit, half the people here memeing at you wouldn't be able to tell the difference or would probably find they prefer the cream cheese version and give you compliments on how "authentic" and "jenois se qua" and "ohhhcrumshrabooshboosh" it is or whatever the hell sound of two raccoons hate fucking in a sack is that passes for that shitty snail-eater language.

The only reason to add it is if you're shit at cooking or trying to make something with random stuff you've got in the house. Despite what flyovers will tell you, you can taste it in the sauce and it's not pleasant.
