How hard is it to make kimchi for myself? Anyone got recipes and tips?
Also how cost effective is it and how long does hand made kimchi in a regular jar last?

Seriously though chopped, salted veg in a slurry of fish sauce, garlic and hot pepper doesn't seem too hard.

This is the recipe I used. Was easy and tasty. Next time I will omit the fish sauce though, because the smell is pretty unfortunate.

You can make quite a lot for under $10 of ingredients. And you can omit some of the "yucky" ingredients like fish sauce and shrimp paste and still get a decent kimchi.
