Interesting. Megumi was able to bring out the rich umami flavors of the perch with the umami from the milk. The umami is off of the charts. I have never seen an umami expert so skilled in the umami art of umami sea food. She is from a harbor town that specializes in umami. I wonder why she didn't try to use the bones? That would have yielded even more fish umami.
