Grouse with chanterelles, russian peas and a port and blueberry reduction. Afterwards I'll have coffee, whiskey and cloudberries. Perfect autumn comfy meal. Sometimes I replace the grouse with dove or wood pidgeon for the sake of variation, and sometimes I substitute the port with red wine, and the blueberries with blackcurrants.

Spare ribs, they're very easy to slow cook but most people never make them. Serve with some kind of potato and the average person thinks you're a legit chef. It's my go-to dish to impress a woman

Aren't those beef rather than spare ribs? Unless 'spare ribs' also applies to beef.
