I'm making Cornish hens for dinner tomorrow and I am not sure what to serve with them.

On hand I have a salad kit, dried beans, rice, carrots, potatoes, bacon, cabbage.
I was thinking the salad and something with the beans?
I'd rather not run to the store but I will if I need something, I already have most spices and staples like flour, sugar and so on.

My man. I love making cornish hens, I usually make mine with an apricot glaze.

I always make this corn salad with them:

3 ears fresh corn in husks
1/4 cup butter, melted
2 roma (plum) tomatoes, chopped
1 jalapeno pepper, seeded and finely chopped
1/2 small red onion, finely chopped
2 cloves garlic, minced
1/2 bunch fresh cilantro, chopped
salt and freshly ground black pepper to taste
1 pinch salt-free lemon-herb seasoning

Basically just cook the corn and then slice it off the cob when it's done. Mix it with all the other ingredients and throw it in the fridge. I like it cold.

I also usually make horseradish mashed potatoes (i hate tyler florence but this recipe is really good):

4 pounds golden creamer potatoes
2 bay leaves
Kosher salt and freshly ground black pepper
2 cups sour cream
1 stick unsalted butter
3 tablespoons horseradish, or 1 cup coarsely grated fresh horseradish
2 tablespoons cooking water
Chopped fresh chives, for garnish

Put the potatoes into a large pot, add the bay leaves, 2 tablespoons salt, and cover with cold water. Bring to a boil over medium-high heat and cook until the potatoes are tender, about 20 minutes. Remove the bay leaves and drain the water from the potatoes, reserving 2 tablespoons cooking water. Smash potatoes in a large mixing bowl. Add the sour cream, butter, horseradish and season well with salt and pepper. Garnish with chopped fresh chives.

Literally every single thing you just listed makes a great side for chicken.

Oven-roast those taters and carrots in olive oil with rosemary and garlic, do the salad kit, and then do yellow rice with peas if you have turmeric or saffron. If not, do white rice with peas.
