I have no idea how to make bread, any tips. Just need simple as shit bread, but how to add/use yeast would be interesting.

this guy makes some simple bread and its a fun watch. Bread/dough handling is mostly about just good technique and not fucking up a simple recipe. With the yeast you should activate it first in a cup of lukewarm water with a little bit of sugar in it. takes no time at all

Suggestions for knowing when my sourdough starter is ready to be used? It's 2 or 3 weeks old, daily or semi-daily feedings, grew a lot in the first week then slowed down. Still lots of bubbles but doesn't grow in size like it used to.
I figure it's good to go. Am I right?

Get a kitchen scale, weighing your flour is key. Keep in mind that you can add more flour, but if you've mixed too much flour into dough, you're fucked, you can't add more water to dough and expect anything good to happen.

ONCE YOU SEE DOUGH that's made properly, a lot of things come into focus. Dough isn't sticky, but it isn't dry, either.

Do a web search on "no knead bread" and "bittman" for an amazing and dead simple bread recipe.

I like the "milk bread" recipe in Joy of Cooking, it's popular with kids, makes great dinner rolls, et cetera.
