I'm terrified of heart failure but can't stop eating the junk food that my family keeps around because I'm hungry as shit and only really know how to make eggs, chicken, and tuna salad. I'm wanting to know any vegetable dishes that I can make that won't contribute to atherosclerosis but also won't leave me feeling empty inside still. I'm especially interested in trying foreign dishes (I live in Burgerland).

Seriously, why do Americans say "I know how to make eggs" or "I make really good eggs"? It's the dumbest thing I've ever heard. It's like saying "I make really good wheat" when you mean bread.

Find some things that add a lot of flavor without adding (too many) fat or calories. Pesto, yogurt sauces, things as simple as lemon or roasted lemon or anchovies or fresh herbs. Then just add them to simply cooked veggies.

For example, sautee zucchini, squash, onion, and garlic. Put in a pita, add hummus, spinach, tomato and tzatziki.

Or look up curtido. Basically shred cabbage, jalapelo, carrot, onion (and radish if you like), with mexican oregano and cilatro, then add vinegar and salt to taste. (this is a quick curtido, not fermented). then make bean and rice tacos, add curtido, salsa, guacamole and a squeeze of lime, you're in business.

come up with your own variations. look for vegetarian recipes from different cultures

No. It's not like that at all. You're really rather bad at analogies.
Americans (and a few Aussies I've encountered IRL) use 'make' interchangeably with 'cook.' No one says "cook wheat" when they mean "bake bread."

ärm maybe start with just searing random vegetables over high heat and eat it with rice/noodles/chicken whatever, start with simple condiments like soy sauce and sesame oil and get better from there

I started putting vegetable in chicken stock with some chili powder, cumin and garlic. Hardly adds any calories and makes everything delicious.
