Well, there is some oxtail I saw the other day at my local market. Could always buy it and try my hand. Chile verde is an easy recipe, many it many a time in my area, that one wouldn't be much of a problem.

I'm actually not opposed to cooking roadkill, provided it's fresh. I'm one of those cooky survivalists a lot of people like to chuckle about. If the meat is fresh, then why not? Racoon though, I don't think I would do in my area. Very prone to disease. If it were squirrel though or some kind of game bird, why the hell not? But we're talking end game; emergency situation only. Was inquiring more about meals with which I could purchase ingredients in the store. Good thought though.
