1/5 should be eggs in larger quantities but in smaller batches 1/6 of the whole mixture
eggs makes it softer and also adds a bit of colour to it all

hope you using a churner that can be refilled with more ice, constant cold is the key when at mixing stage

I find it's both easier and tastier to make vanilla ice cream white rather than yellow, so I use food starch. Corn or potato is best. If ya wannna use eggs, the general rule is one whole and one yolk per cup of milk, ergo with the amounts I'm giving below, you can use two whole eggs and two-to-three yolks. Just use wholefat milk only and be sure to temper the eggs properly because milky, vanilla-flavoured scrambled eggs is not something most people would wanna eat.

However, making it with starch instead is pretty easy: 350ml skimmed fat milk, 3-4tbsp of starch, one vanilla bean and a little vanilla essence (or only essence: more on that below), 100ish g of sugar (to taste), a pinch of salt, 175ml each cream and wholefat milk (or, if you're in the US or Canada, 350ml half-and-half).

Set aside 50ml from the skimmed fat milk and put it in a bottle with the starch then lid tightly and shake to dissolve starch throughout; set aside.
Split and scrape vanilla bean innards into a pot and top off with the remainder of the skimmed fat milk as well as all the sugar and the salt; place the pod itself into a bit of sugar to infuse it with vanilla flavour, thus making vanilla sugar for future use.
Set the skimmed fat milk mixture over high heat and cook, stirring constantly, until sugar is dissolved, then bring to the boil, taking care not to burn the milk nor allow it to boil over.
Re-shake the starchy milk and pour it, all at once, into the sweetened milk, stirring all the while to evenly distribute.
Lower heat just enough to maintain a simmer, and cook just thick enough that it'll coat the back of a spoon. Off the heat, add the wholefat milk and cream and chill the mixture for several hours.
If you think there may be lumps, strain the mixture through fine mesh then stir in a few drops of vanilla essence (to pick up the flavour; if not using bean, add a whole tsp or two) and run the mixture through an ice cream maker according to its instructions.
