We picked up a Prime full packers brisket at Costco today for $2.69

Earlier in the year they had them for $3.19 per pound but today they were even cheaper.

The prime briskets they have are great for smoking. I bought a choice packer brisket from a butcher and it cost me about $8 per pound so this Prime is great at such a cheap price. And it tastes alot better then the choice did.

I will throw it on my Kamado Joe in the morning and smoke it for about 9 hours @ 250f

Hooray brisket! I did this one in seven hours at 250 but I cheated a little.

I smoke at 250f till 175f.

That is when briskets "stall". Meaning they slow down in cooking alot.

And this is when I use the Texas Crutch which is to wrap it and put it back on the smoker till it reaches 195f

I take it off and let it rest up to about 200f

There are some connective tissue that will not break down till 194 or so.

Ive done a couple 14 pound briskets already this year and this one is a bit smaller.

Ive tried smoking at 275f once because lots of people recommended it but the temp raises too fast at the start
