Spread mayo on the bread, not butter. Lay it down mayo side first in a frying pan. Place kraft single down or velveeta slice, then layer dill pickle slices, then another piece of cheese. Firstly, fuck mayofags.

Now we've got that out of the way, try this method:

1. Add ~2tsp salted butter (pref. clarified) to hot skillet, griddle, pan, etc.

2. Lay down first bread on top of melted butter

3. Lay down cheese on top of first bread slice

4. Cook until bread is golden brown and remove from grill

5. Remove single slice of bread with cheese and repeat steps 1 and 2 with a second slice of bread

6. Lay down first slice of bread w/ cheese on top of second

7. Cook until golden brown and done.

Never understood why people butter the slices of bread beforehand. It's a pain in the ass, and it fucks the bread up.

Ok. So get ready for a whole new type of grilled cheese. It's been a family tradition for 3 gen.

You take a loaf of of Italian bread and slice it lengthwise down the middle. Then you cut as big of a piece as needed and lay it face up.
Next take thin slices of ny state extra sharp cheddar (or close as possible) and lay it on top of the entire surface of the bread.
Then bake it in the oven at 425 for about 10-15 min (and broil for a minute or 2 at the end if you like it extra crispy)
I recommend salt, pepper and/or tomato as toppings.

I've never heard of anyone else making this type of grilled cheese. Gotta thank my innovative grandpa as well as my dad for this awesome recipe.

Just don't make a stupid mistake like using miracle whip instead of say....Hellmann's or Duke's or Blue Ribbon.

That is the main secret. Other than that, a good grilled cheese is all about the quality of the cheese inside. I like to use a combination of cheeses. I like some actual American cheese (not Kraft singles, that's fucking plastic cheese), and some Jarlsberg, and sometimes I'll add a third cheese, which is usually a soft cheese that goes in-between the semi-hard cheeses.

Pros: the sandwich had very nice, even browning. Mayonnaise is also easier to spread on soft bread than cold butter, so it saves time.
Cons: the sandwich tasted very greasy and lacked flavor.
You know mayonnaise is just an emulsification of vegetable oil, right? The tiny bit of eggs in there do indeed brown the bread nicely, but under the heat the vegetable oil simply melts out of the emulsification, and its just that: fucking tasteless, greasy vegetable oil. Its nearly impossible for you to defend your method against this FACT. Buttered bread tasted better than bread with vegetable oil.

Here's an actual tip to add flavor: mix some of your favorite mustard with the cheese. Skip the mayonnaise bandwagon, its not an improvement.

If I just want something plain and nostalgic. I do white bread with two kraft singles. One kraft single aligned with the bread slice, one rhombus so the edges of the cheese slightly melt downward off the bread and signify to me when the sandwich is done.

I also butter the bread with a knife and nothing else. No butter goes in the pan. I heat the pan on medium low for a moment and quickly assemble. Butter bread side down, aligned kraft single, rhombus kraft single, butter bread side up. About two mins on each side.

I would recommend trying wexford Irish cheddar, or muenster cheese, or Boar's head white Vermont cheddar cheese with either onion bread or Ezekiel bread.

Keep in mind that Ezekiel requires more cheese because it's a very hearty bread with a lot of fiber. But any of those combinations are golden and they pair fantastic with creamy tomato soup.
