I have a rack of babyback ribs I've been too lazy to make so I'm sort of following your lead, OP, with temp and time. Cut in half to fit the baking dish. Some beer, worcestershire and teriyaki for moisture. A light sprinkling of Old Bay and McCormick Cuban seasoning & Cajun seasoning. Covered it with foil. I'll finish it with a slathering of Sweet Baby Ray's. (i could do better but that's the sauce in the fridge, so i'm using it up)

Beer of choice is Yuengling Lord Chesterfield Ale.

I have a designated pot for frying and I just keep it filled with oil in the oven. But I have a lot of extra pots.
What you could also do is wait for the oil to cool and then pour the oil into jars and save it for the next time you fry, or even just keep using it as regular oil. The oil stays good for much longer than people realize. I could probably recycle the same fryer oil, I'd say, 20 times, depending on what I was frying. And I'd probably throw it out because of flavor more than because the oil was old or burnt.
You could save jars from things like tomato sauce or pickles you buy from the grocery store. Or even just pour it back into the oil jug.

went to some place called spindletop brewery yesterday, was under the impression it was a gastropub, it was not, they just happened to have a guy there grilling. Me and my friend ordered the "wagyu beef burger" for $9 which was already suspicious, we sit there and i watch him grill the patties for 20-30 MINUTES, after like 15 minutes I am literally sperging out but my friend seemed to have faith in this guy. finally he gives us a seriously overcooked burger with unmelted cheddar and a cold walmart bun, plain and dry, they had a small condiments bar, one of the worst burgers Ive ever had didnt even take a pic, no fries or anything, beer was decent but will probably not go back

Yeah I can see it. IIRC it takes about 40-45mins to cook the sauce properly then another 10-15mins for the eggs, so it's a 1 hour dish basically. It means you don't get that liquid you got in the bottom of the pan and the whole sauce is bound a bit better. Try crumbling feta and throwing some chopped parsley over it, just when it's done cooking. This is a good recipe to follow

Nobi public house is stellar, and their beer selection is overwhelming. It's wonderful.
Cuisine of India by NASA is also very high quality- go at lunchtime on a weekday and they have a buffet set up, so you can get everything.
House of pies is worthy of it's reputation- their Monte cristo sandwich is heavenly, and of course the pie is great.
Tradiçao Brazilian steakhouse is overpriced as fuck
Dimassi's Mediterranean is closed- best Mediterranean in the area is Wael's on bay area
Jinya ramen bar is nice, you can get a really good bowl of ramen and they have good priced sake, as well as a friendly staff
Thai cottage is totally forgettable- conversely, Thai Seafood on NASA is

I don't usually order pho but there's a couple of very similar restaurants that come to mind- Sesame house in dickinson is good, and there's a hole-in-the-wall sort of spot that is next to Hong Kong food market on Scarsdale- it's not coming up on Google maps though, and I can't remember the name. Super helpful, right? Scarsdale and beamer, about 3 businesses down the strip from Hong Kong food market.
I have also heard absolutely incredible things about the pho at Nobi public house at hw 3 and NASA- "ruined all other pho for me", but they only serve it sundays, and it's first come first served til they run out

i rub the patti with olive oil and put a bit or sunflower oil in the pan but most of that is the fat melting off, the fatty meat is so that the burger doesnt dry out too fast while cooking

the olive oil on the patty is something ive just done for a long time, people always complient my burgers and i cook them at family events sometimes, it helps them not to stick to the grill and i like the flavor, might not be necessary but its just a habit

yeah, i used half a potato instead of a full one so the oil temp probably didnt drop nearly as much.
