If shoulder, stew or braise it.

If loin, season it and either sear and finish in the oven or roast it at a fairly high temperature. You could also butterfly it, stuff and roll it and roast it, or cut into chops and brine them, then sear them and finish in the oven and make some kind of sauce.

Eat the whole thing raw in one sitting. Salt and pepper to taste, if you wish.

rince with water, pat dry, rub salt generously in it. leave in plastic bag in fridge overnight.
Preheat oven. put skin side up. Foil it up to prevent burns. Oven roast for half an hour. remove foil. roast half an hour more. yum & simple. Toss few whole potatoes for side dish
