I'm looking to get a professional grade set of knives around the kitchen.

I don't need to spend $300 per piece, but I want a quality set for household use that will hold their edge, not corrode and which can be sharpened for a lifetime of use.

If you're a home cook, 400/1000 combi will do everything you need. A professional service once a year will probably be a better investment for the average home cook. Whetstones are overkill for home use.

If you're a professional 600, 1000, 3000-5000 will keep your edge in great shape. Use the finishing stone 1-2 times a week instead of a honing steel. When it gets worn enough use the 1000. Unless you damage the blade you are unlikely to need the 600, but it's there if you need it. Proper day to day maintenance is implied

Get the combi, it'll be enough to learn on, and when you start making "big bucks" then you can get a finishing stone.

I generally recommend seperate stones for professionals because the quality is usually higher, they can come with a base which will keep your stone further off a surface, and you'll be using them more often. The downside is they're more expensive.

As far as brands. King and naniwa are highly regarded. I recommend either of them. I've been using naturals for the last few years so if someone who is more familiar with synthetics has a better recommendation for brands, I'd listen to them.

Can attest to Chicago Fusion having a great knife set for the price. I purchased one of their chef knives on a whim for like $20 and it's been an absolute beast in my kitchen. About to spring for a full set, maybe one of their more expensive pairs just because the quality is so good.
