bayleaves are nice but unless you make a tonne of soup all the time there is literally no reason to buy them or else you'll end up with ancient bayleaves since grocery stores and shit don't exactly pay attention to them

This. Dried herbs are never as good as fresh, but bey leaves are pretty sturdy. The downside of this is people assuming they last forever, which they do not. Adding really old bay leaves to a dish accomplishes nothing. Throw them away and source some fresher ones.

OP here, I'm just trying to get good information. I think it's reasonable to be skeptical about a lot of cooking techniques that other people accept without really considering. Has anyone even done a double-blind study on bay leaves? I doubt it.

If you have any doubt as to what bay leaf does for a dish, take a bunch of them and pressure cook them for ten minutes, then smell the water, and drink the water, and compare that to regular water. That's the bay leaf smell. That's the bay leaf taste. It's very real, you will see nobody is making it up.

The thing is unlike many herbs where there's basically no such thing as too much (see: thyme), it's not something you want in huge amounts, which is why when the recipes are followed normally, it doesn't really jump out at you. Otherwise your dish ends up smelling like vicks vapo-rub.

The challenge here is that you can't just add it to your egg quarters when experimenting. The flavor can't be fried in and needs to be simmered out. You could try making two plain cauliflower or cabbage soups, one with bay leaf and one without. That might help you see the difference for yourself.
