i started dishing at 27 and made sous at a decent place by 31. a lot of people can't deal with the rush though.

I don't know how it is in other countries, but here you need to have mandatory education before you get the title of chef, like hygiene and microbiology. I'm still not sure if you can be a trainee for years and still work as a chef in private business, but perhaps not work in institutions

they have that here, in texas, its just food manager certification
the restaurant is required to have one member of staff with it on premises at all times
culinary school is helpful but optional usually if your a badass

shit job. enjoy working 70 hours a week as a salary employee and it breaking down to like $10/hr

if you really have a passion for cooking and want to make money as well your best bet would be to start your own place, own it and work in the kitchen. would take a ton of motivation/risk but thats about the only way you are going to make any money.

food trucks can be highly profitable with less startup risk as well.

going into a kitchen and begging for a job though is going to be a super long shitty career.

worked hourly in kitchens for 4 years and it was always pretty sad to come in after my manager, leave before him and still clockout with 65-70 hours a week and know he was getting totally raped. any time i was offered a salary position i turned it down.
