it'd be fun to experiment with fermentation.

apparently letting your pepper mash sit out and breathe results in some tasty flavor changes.

fucking delicious. They also have a curry version of scotch bonnet. I put the sealed bottle in my bear cooler and the cooler smells like curry ever since.

Got myself a bottle of Nothing Beyond for all my hotness needs. It's rather moderate as the "extreme sauces" go, but 2 drops per bowl of soup make for a fun experience.

I just recently finally came around to the green tabasco. I used to always try it & go back to the regular tabasco, wanting so badly to like it. But after trying it so many times, I think it's awesome now.

huy fong is standard, shark brand is pretty good but different. if you can find it, the best would be some mexican shit in a water bottle by badia, but it's hard to find. Kikkoman and Franks should be steered clear of. Of course, there's always sambal olek or spicy chili crisp, but those are more pastes than sauces (although still condiments)

just finished a bottle of that. I've been trying different brands to see which I like best. I have pic related at the moment and it's my first time trying it. I like it. Used it on some pork tacos tonight but its a little sweeter than I was expecting..might try it on fish next.

just got a bottle of this, because i live in north commiefornia. disgusting—way too sharp with nothing to balance and round out the flavor.

also, trader joe's sriracha is quite nice, v. sweet.

black valentina is best mexican-style vinegar hotsauce. excellent taste.

I used to buy that all the time. I loved it, but yeah it's sweeter. No vinegar at all - it's a vegetable base. Throw some extra lime on those tacos next time if you want more acid.

this shits really hot, apparently over a million on the scoville scale, but the flavor is unreal. a little bit spread on some grilled meat goes a long way. Definitely in my top 5
