I respect the idea, but I don't like the hot sauce (??) over the top. I think it would have been better if you had added some spice to the hollandaise if you wanted it to be spicy. That said, I think fried chicken benedict could be awesome if made well. I'd probably use a sourdough waffle as the base, though.

We do the same concept at my work, but we use a waffle base and top the hollandaise with maple butter syrup. So fucking tasty yet it rarely sells.
