Can I brown/sear stuff in a 1 gallon pot with aluminum core or is it really such a big problem for some of the heat to go up the walls? Surely I can still reach temps for Maillard? I don't want all the oil to splatter everywhere, you see.

Of course you can.

If the oil is splattering you're doing something wrong, most likely putting wet food into the hot oil. Oil doesn't splatter on its own, it splatters when water gets into it. Pat your meat dry with paper towels (or similar) before you sear it. That's especially important if you marinaded the meat first. You want it dry before it goes into the pan to sear.
