- iron is found in high sources in leafy greens
- same with protein
- vitamin d is found in sunlight and fortified milks
- omega 3 is found in seeds and nuts
- animals do not naturally produce large amounts of b12. Livestock feed is supplemented with b12 which humans then consume. B12 is actually created in the soil. Historically, we got enough b12 because we didn't repeatedly wash and sanitize our produce before it reached our plate. B12 is found in cereals and nutritional yeast, but many choose to supplement with pills anyway as the effects of low b12 levels are devestating and irreversible. 40% of Americans are deficient in b12 despite the vast majority of them consuming animals regularly

Combine vital wheat gluten with water and spices, massage the dough for a minute, let rest. Bring a pot of vegetable broth to a very light simmer. Add in the dough. Cover and walk away for 30 mins. Do not let boil. Remove and cut up. Seitan is that easy
