I've had good luck doing them just like normal potato fries with the double-fry method:

-fry 'em once at around 310-325F until they just barely start to get color.

-drain and let them cool

-fry again at 350 (or hotter, if your oil/fryer can handle it) until golden and crisp.

They come out really good, but admittedly they do not stay crispy for long. Once they sit around for a while they end up limp.
