Not sure about the bolognese, but Japanese mayo is probably referring to Kewpie mayo, which is a lot different and superior to regular mayo. They use apple cider vinegar or rice vinegar instead of distilled.

Yeah. Japanese mayo is either made with apple cider or rice vinegar instead of distilled.
There's also Kewpie mayo which is what they're probably referring to, which is just made with egg yolks and their own vinegar blend.
