Thoughts on shirataki noodles as a ramen replacement?

Yeah, that mindset is dumb and all, but they do seem to be a decent option to add with a stir-fry or soup for when you're on a cut

Nothing really. They're diet food. The only reason to eat them is if you want to make the food super low calorie. From a taste/texture perspective there is always something better to use.

I used "fettuccine" tofu shirataki noodles (10 cal per serving; 20 per package) for some shrimp fettuccine alfredo last week and it tasted fine, but I definitely am glad I used a shitton of pepper. I might make some soup with the same noodles later. Anyway, I'm sure they'd work fine for ramen replacement.

No if anything it's even worse for soba or udon replacement since those are more dependent on the flavor of the noodles and less of the sauce.

If you use shirataki noodles, for mercy's sakes, at least make shirataki dishes. Don't just go blindly substituting ramen noodles with it, because it's not meant to do that.

I tried them and I didn't like them. I spent a lot of time on a pesto thing too to dress them up, but I just didn't care for them.
