The meat is fatty and in chunks, sortve chewy, soup itself is a bit thick because of the fat but not comparable to the thickness of say broccoli or mushroom soup

Just more sticky I guess, unfortunately dont have the recipe and the ones online look like shit especially because they seem to be by people that have nothing to do with the culture that makes the soup originally, it takes alot of prep though so it'd only be worth making for family gatherings

Clean feet, scrub til meat is white, boil overnight until the tendons/meat are pretty much falling off the bone, dont bother adding salt until its done and then you just add it to your own bowl along with grated garlic, lot of people like eating baby radishes with them

Chilli and beef? I've found that flavour combo works fantastically. Also, bear in mind that because I'm stewing it, most of the real heat is going to be cooked out, just leaving a little bit of warmth. Think of it like pepper (of which I added none).

When you write it that way, sure. But IMHO the fruity flavor of scotch bonnets work better with fish or poultry. A different sort of chili would be a better match for the beef. Also, the chili would sort of clash with the wine I would think.

From my local butcher britbong. Don't ask at any supermarkets, they aren't allowed to sell it because disease that was eradicated years ago. Try any butcher that gets his own meat. Failing that, try a pet shop. Seriously, it may feel weird, but their beef bones are just like any other after you roast them. Bone marrow is a GOAT-tier flavour enhancer, I'd advise using it in any meat dish.

My complaint was that I dont think chilli goes in this particular dish. To me this is like adding soy sauce to pasta carbonara to make it salty. Sure you can do that, and it might work, but it really doesnt go together and you would be better off without it.
