Tart cherry, my friend. The answer is tart cherry. Like is tart? Sour cherries low/no sugar. Like it sweet? Add lots of sugar. Or honey. Goes well with alcohol, in fruit desserts, on bread, and already naturally has a cinnamon aspect to their nice, complex flavors that changes based on aeration or additives.
