Hey co/cks/
Merry Christmas Eve.

I come with an inquiry. This mainland vintage cheddar was purchased a few days ago at my local costco. i opened it up to try it and found it unexpected. First, the aroma had a mild decomposition smell (like a dead human body [I did some work in forensics]). Second, it was not sharp really. I can't describe it very well, but very much unlike other aged sharp cheddars I have tried.

Has it just gone bad, or is it supposed to taste/smell like this?

Vintage cheese smells like old cheese. Hope this helps.

Also, provided the package was vacuum sealed and air tight the cheese should be good.

Ok this helps. Perhaps I will find another vintage to compare it with. The package was sealed and airtight. Texture and look are alright.
