Crumble it and use it instead of feta.

No it's made of caesin like any other cheese but without enzyme. Ricotta is whey. The closest equivalent is buffala mozzarella that doesn't melt. Since 99% of Indian paneer is also made from buffalo milk. Slightly more crumbly than mutz.
