What's the appeal of pork chops? To me they seem bland and tough and the flavour they have isn't that nice.

I'm not against all pork, definitely not. Bacon and sausage are great. Pork pies are great. Pulled pork is hnnnnnng. Carnitas is great. Slow cooked pork belly is great. Slow cooked pork shank, finished off with high heat to get crackling etc. is great

But pork chops? They do nothing for me.

They're easy to overcook, so many people end up eating them dry and chewy, which is terrible.

Even if cooked perfectly, however, they're still a pretty mediocre cut of meat.

I'd put them just above chicken breasts as the blandest, most boring cut of meat.

Try using a marinade, or even shake and bake on them. My mom would always make her pork chops with shake and bake and they would always be god-tier.

Realize this is because in the US pork has been bred to be leaner and leaner over the last few decades. If you know anyone who raises their own heritage breed pigs and can get chops from them the difference will be night and day.

But I agree with you that lean pork is as pointless as commodity chicken breasts.

I know what you mean. They are kinda bland on their own if they're not seasoned. When I make spaghetti I like to add a couple of bone-in chops to the sauce and let it cook until the meat is falling off the bone. It really enhances the flavor, especially is you add all the grease and refuse from the skillet you browned them in.
