Huge fan of offal here. In fact I made >>7159247 just a few days ago. I think tripe has one of the strongest flavors around when it comes to offal, along with liver, which might make it less appetizing to most people. Needs to be seasoned and cooked well as to not overpower the dish.

But when it's made right, it's glorious.
