Is it safe to eat some sausages that are two days past expiry date? The package has been opened but I put them in a plastic bag.

Good God OP, no! If you even *look* at food that's one second past it's expiry, you'll die.

Or perhaps use your finely tuned human senses to detect if they've gone bad? Do they smell? Have the turned a funny color? If not, they're probably fine. It's only been two days.

It's some bratwurst type sausages.

But I think I'll take my chances, they smell fine. I'm using them for an omelette, first time I'm making one. I don't eat a lot of eggs.

I've met so many Americans who would go crazy if a food item isn't put in the fridge RIGHT AWAY CAUSE ITLL GO BAD.

That's probably a sell by date, not an expiration. Also those dates always err way on the side of caution so you're fine. Also if you can't tell whether sausage has gone bad you have no business cooking it in the first place.
