dunno if this is a troll thread. grocery store salsas are, by and large, full of sugar to appease american tastes. i don't consider most of them to be salsa. you're correct in calling them "sour ketchups."

salsa is spanish for sauce. it's literally a generic word. there are probably dozens, if not hundreds, of different salsa recipes. the tomato based sauces are more mainstream, but you can go down to Mexico and get sauces made from just chiles and vinegar + few other spices. those will melt your face off though, so that's why they're not mainstream in the U.S.

best salsa for me personally is salsa de molcajete. you grill your peppers, tomatoes until they're nicely charred. then you just mash em' in a mortar n pestle until it's chunky and rustic. das it mane.
