This steak is overcooked. If you like your steak well done you have no appreciation for flavor and are likely some whiny man child who is paralyzed by his fear of germs like some stringy meal mouthed schizo. It's been thoroughly studied and the concern is valid. You don't need to eat dry steak, just cook it properly, and to a minimum of whatever, I think it was 140 or 145, which is barely medium done. Well done is upwards of 170 or 180.
