Now that I'm finally out of a shitty living situation, and able to cook food on my own... I was watching various chefs on Youtube and Vimeo.

The most active I saw was Food Wishes. What do you lads think about his recipes?

His recipes all seem pretty sound to me. I've used his pita recipe many times without fail. What I absolutely cannot stand is his cheesy and repetitive narration. The way he talks to you like a fucking baby...ugh.

I find his voice incredibly soothing. I tend to watch his videos when I can't go to sleep, they're quite relaxing.

My only gripe is that he seems to add cayenne to every recipe. Granted I don't cook so it might be unfounded, does this actually do anything good or bad to the food?

Well... like I said I never really cooked until literally last week. Never used cayenne, but he seems to like it a lot and use it in practically every recipe.

It adds a slight kick to recipes. I even like a little cayenne in my homemade salad dressings, especially ranch. It's not like you'll typically be missing out if you don't use it, but if you like it you rarely go wrong with its addition.

Though most recipes don't seem to fit my personal taste. Some sound interesting, like that watermelon drink.

most of his recipes are okay

like the other anon, I've also tried his pita and tzatziki recipe, as well a few of his shrimp recipes, all of which turned out great.

his fisherman's pie on the other hand was fucking awful

personally i think his recipes are hit and miss, with maybe a 80% success rate
you can really tell when hes "experimenting" or stepping out of his comfort zone with some stuff but imo the style he films and instructs with is comparable to the great tv chefs in how fun he makes it to watch

He holds my attention at least and makes everything easy and quick to watch unlike most chefs who take like 15 minutes to explain the recipe and talk about their trip to italy and other bs.

Cayenne is like pepper, it povides a hint of heat that somehow makes the food tastier. Sometimes it's almost as if the food tastes more after you add it. When you really know your shit cooking wise you know when to use black pepper and when cayenne is more appropriate or white pepper or just salt.

Food Wishes is great for Italian and Americana. And for flyover interpretations of various foreign cuisines. He's a great Youtube chef but use common sense in which of his recipes to follow.

Common sense? People don't know how to cook which is why they are watching him in the first place. They don't know about which flavors goes with which. They don't have the common sense of people who cook regularly. Why do you think all his vids no matter if they're good or not get such high ratings?
