I appreciate genuine Mexican food but know so little about it. It irks me that food culture in the U.S. praises lame old French, Italian, and (for some fucking reason) Asian/SE asian cuisine. I feel like we're missing out on some amazing dishes and they're right underneath our noses.

I have heard so much about menudo that I've went and bought nearly all the ingredients, but when I partitioned the tripe for the freezer it leaked rancid vomit-ass juice everywhere, and even though I rinsed it out I'm really afraid to cook with it.
