I worked at a chicken factory that prepared bojangle chicken before shipment. Before being seal in a bag the chicken is sorted for defects then arranged depending on the order (8pc or 10 white or dark) then ran through a machine that inject the chicken with what we called a "marinade" it was just chemicals mixed together in a bag mixed with water.
