This is tied with chives imo. I love finishing my creamy meme eggs with fresh tarragon. The classic French omelette with 'fines herbes' has chives/tarragon/parsley/chervil but the chives and tarragon are the stars.

I occasionally do a quick lunch of fried eggs, softened onions, morcilla, and a big handful of coriander, all with a hefty dose of paprika on top. Delicious. Eggs will go with just about anything.
