Hey /ck/. What are some cooking mistakes it took you forever to figure out NOT to do ever again? Simple little things that make a big difference. For me, it was learning not to be too finicky with 'burning gunk,' via discovering what fond is, and that it's not only good but important in a lot of dishes.

broil bacon; don't pan fry it and think it'll get crispy.
cook scrambled eggs low and slow constantly stirring.

Rinsing rice before cooking it.
I'm dumb.

>> No.6962603

Not worrying about a few lumps in cake and pancake batter. They go away while cooking, and it's more important to avoid overmixing.

None of the rice I've ever made said to rinse it on the packaging...should I start?

>> No.6962608

>>6962606
Yeah. I don't think it makes a difference whether you do it before or after cooking, but there's stuff on the grains that you don't want to eat.

Misinformation once again!

White rice is enriched with added vitamins and minerals...to the surface of the rice. Washing it away washed the nutrition added back that was lost in the milling. There's nothing else 'bad' beside starch, which you only need to reduce in certain dishes.

>>6962618
What rubbish. Rice isn't enriched unless it says so on the packaging, and you pay too much for it. If you want supplements, take supplements separately.

Rice can be coated with talc powder and other shit.

raw rice is dried but not washed (otherwise it'd expand and spoil) so you'll probably have all kinds of shit particles from unwashed 3rd world hands on it

>> No.6963662

If you fry the rice before adding water you don't have to rinse it.

To season shit simply or use less spices.

For a long time my mom would cook really bland food so when I started to learn how to cook I would over season shit like a mothefucker. Especially steak, I never understood that it's mostly the quality of the meat the provides for flavor

I have too much of an aversion to salt so I end up not using it completely most of the time, and then I wonder why shit is bland.

Sear my beef on high for the shortest time possible

You can't just half-follow a recipe, cornstarch isn't something you can just omit

Milk always scalds because I'm retarded. I'd rather deal with the lumps that aren't even a problem since I whisk the everloving shit out of it anyway.

It's comfort food. Reminds me of my childhood. I also enjoy meatloaf with plenty of filler.

You should if you want light, fluffy rice. Soak in cold water for however long you like, 30+ minutes is most effective, and make sure to cook it in fresh water. Removes the excess starch so the grains are less stodgy, don't stick together, and are just more digestible.

This is strictly long and mid grain rice, risotto and paella are pretty much a different grain.

Also you'll notice it reduces the time to cook
