Yeah, it absorbs flavour like a sponge. Well, it literally acts like a sponge - you add it to stock or broth or just water and rehydrate it to the desired consistency. It's about 60% protein by calorie (VWG is around 80%)

No, it's just an economical and long-lasting food source from which you can make high-protein meals that mimic meat to some degree.

TVP varies widely in terms of quality, you can get stuff like (pic related) that is so close to ground beef in texture that you wouldn't notice the difference in a taco or anything.

You can mimic things like sausages pretty well with seitan, since sausages tend to be heavily spiced and the texture is easy-ish to replicate. But seitan has a higher learning curve to make.
