poached - underdone (whites white on the outside, but not by the yolk. I like risking breaking the yolk when I go to pick it up because I'm a hard ass)
scrambled - overdone, brown starting to appear

There's no such thing as exceptional eggs. And even butter doesn't have that big a quality range. Some eggs looks better than others some are more nutritious but when it comes to taste the best and the worst are too close to give a fuck.

I like my eggs country style too but like to have French omelettes when I want them stuffed. Either that or spread very thin so I have multiple layers when rolling them up.

Yeah. Absolutely NOTHING wrong with an omelette having a little browning here and there. Cooking one perfectly yellow is only a matter of low heat and keeping it moving once it sets. If your scrambled eggs have brown in them it'd better be from the bacon/sausage grease you cooked them in.

Also, fried over medium (hard white, runny yolk) is best. Huevos Rancheros are best scrambled eggs.
